today you have received a taste of our best cheese. We are working with organic livestock for some years now and we supply this variety of premiumproducts from our village called Alcalá de los Gazules. Our goats graze on land in one of Andalusia’s most important natural areas, the LosAlcornocales Nature Park. This is a range of complex mountains classified as a “specialarea of conservation” in the EU Natura 2000 Network, and is also part of UNESCO’sIntercontinental Biosphere Reserve of the Mediterranean. That’s why it’s an area of hugenatural value, which has been a source of resources for many generations of farmers andlivestock farmers, so we must protect it for its future survival.
Our organic livestock model is a passionate commitment to the conservation of ourregion’s natural and ethnographic heritage, which we promote to fellow livestock farmersso that conservation can be a hallmark of our industry.Our recipes reflect the tradition of our ancestors. We’re a family of farmers who have beenmaking cheeses for several generations. Today, the innovation we implement in all ourprocesses is a guarantee of safety and quality, but in no way alters the original flavours.
Keep the cheeses refrigerated and in their original packaging until serving. Before eating,leave them out of the fridge for twenty to thirty minutes, which will let you savour all theirnuances and spectacularly succulent notes. Afterwards, store in an airtight container inthe fridge for as long as you want, but we recommend finishing them within one year.
